Barfi is a classic Indian sweet — a dense, milky fudge loved for its richness and versatility. This festive twist combines peanut butter, stem ginger, and chocolate, resulting in bite-sized treats that are perfect for Diwali celebrations.

You will need a 28x20cm (11x8in) baking dish to prepare this recipe.

Ingredients
- 20g unsalted butter
- 400g condensed milk
- 100ml double cream
- 4 tbsp smooth peanut butter
- 200g milk powder
- 80g stem ginger, roughly chopped
- 60g flaked almonds
- 75g dark chocolate chips

Method

1. Melt the Butter and Combine Ingredients

In a large, heavy-bottomed saucepan, melt butter over low heat.
Add condensed milk and double cream, then stir in peanut butter. Mix thoroughly for 1–2 minutes until smooth and well combined.

2. Incorporate Milk Powder

Gradually add milk powder, whisking continuously until the mixture reaches a smooth fudge consistency.

3. Add Ginger and Almonds

Fold in the stem ginger and half of the flaked almonds. Mix evenly.

4. Prepare the Baking Dish

Line a 28x20cm (11x8in) baking dish with greaseproof paper. Pour the barfi mixture into the dish and flatten it evenly. Let it cool to room temperature.

5. Add Toppings

Sprinkle dark chocolate chips and the remaining almonds over the top. Gently pat them into the fudge.

6. Refrigerate and Set

Refrigerate for 6–8 hours until the barfi is firm.

7. Serve

Cut into squares and serve as a festive treat.

Tips

- Barfi is easy to make, but setting time is important - plan ahead to allow it to firm up in the fridge.

- For extra flavor, lightly toast the almonds before adding as a topping.

- You can experiment with white chocolate chips or dried fruits for variation.
