This July, Anise, the all-day dining restaurant at Taj Coromandel, invites guests to board a memorable culinary expedition with Tracks of Taste - A Culinary Journey Across India, a specially curated Sunday brunch inspired by the country`s most iconic railway routes. Blending nostalgia with regional gastronomy, the experience celebrates the rich flavours, traditions and stories that have long accompanied journeys across India`s vast rail network.

The restaurant transforms into a bustling railway junction, complete with vintage platform signage, brass tiffin carriers, live stations hosted by uniformed "station masters" and the familiar sounds of train whistles, recreating the charm of a bygone era. Guests can embark on a culinary voyage across India, discovering regional favourites that have become synonymous with legendary train journeys.

The menu traces celebrated rail routes and the culinary treasures they are known for. The Deccan Queen serves Mumbai`s much-loved Batata Vada with Cutting Chai from a live fryer in traditional newspaper cones, while the Howrah Rajdhani showcases Kolkata`s Kathi Rolls and Mishti Doi presented in clay pots. The Grand Trunk Express brings the comforting Railway Mutton Curry served with steamed rice in stacked brass tiffins, and the Jhelum Express features Amritsar`s iconic Kulcha and Chole prepared fresh on the tawa. Representing southern India, the Coromandel Express offers Kai Kari Stew paired with Kal Dosa, complemented by authentic Madras Filter Coffee served in brass davaras.

The journey concludes at the Dessert Car with timeless railway favourites including Caramel Custard, Fruit Custard and Kanpur`s celebrated Badnam Kulfi, while a roaming beverage trolley serves refreshing kulhad chai and classic lemon soda, completing the authentic railway dining experience.
