Healthy Food Recipes - Brinjal & Drumstick Curry

Ingredients
  • Brinjal – 250 grams
  • Drumstick – 1 no
  • Onion – 2 nos
  • Tomato – 2 nos
  • Garlic – 5 cloves
  • Curry leaves – a few
  • Turmeric Powder – ¼ spoon
  • Sambar Powder – 1 spoon
  • Salt – To taste
  • Tamarind – a small lemon size
  • Mustard seeds – ¼ spoon
  • Cooking oil – 3 spoons
Method of Preparation:
  1. Cut the Brinjal in your desired shape and place it in a bowl of water along with a pinch of salt.


  2. In the same way, cut drumstick into small pieces and place it in the water.
  3. Finely chop both onion and tomato and keep it ready.
  4. Heat the pan with a spoon of cooking oil and add mustard seeds and wait until it splutter. Then add curry leaves, minced garlic and chopped onion. Sauté it well until its colour turns golden brown.



  5. Then add tomato. Fry till it gets shrinks and the raw smell leaves.
  6. Then add the drained Brinjal and drumstick to it and stir well.



  7. Fry for about 2 to 3 minutes.
  8. Then add salt, turmeric powder and Sambar powder to it.



  9. Then a minimum quantity of water and allow it to boil.
  10. Once the Brinjal and drumstick gets boiled well, add the tamarind extract juice to it and allow it to boil for about 2 minutes and switch off the flame.





  11. Tasty Brinjal- Drumstick Curry is ready to serve!



Tips:
  • This Brinjal- Drumstick curry suits good for: White Rice during lunch menu - Vegetable Rice , Lemon Rice, Rice Pulao & Curd Rice
  • If you don’t want the dish to be sourer, you can avoid tamarind and the addition of tomato is sufficiently enough.
