Ingredients:
- Raw Rice – 1 kg
- Urad Dhal – 250 grams
- Cumin seeds – 2 spoon
- Ghee – 50 ml
- Fried Gram – 100 grams
- Salt – To taste
- Oil – 100ml
- Sesame – 2 spoon
- Oil for Deep Fry – 750 ml
Method:
- Wash, drain and spread the raw rice on a cotton cloth to absorb the excess moisture under the sunlight for some time.
- Just heat the urad dal in a pan, and allow it to cool.
- Grind dried rice, urad dal and fried gram into a fine powder.
- Sieve both the flours together through a fine sieve.
- Add the cumin seeds, salt, sesame and 100 ml of oil make a firm dough with the sieved flour. Rub in the ghee and knead with light hands to fully combine the butter.
- Be careful with water. You want just enough water for the dough to come together.
- Pinch of some dough and place it inside the mould. Now using the top, press the dough through the star shaped (whatever it may be) hole.
- Heat 750 ml of oil and fry the muruku’s in batches. Take them on a plate and gently slide them into the oil and fry on both sides till it becomes light golden brown and crisp.
- Drain and let it cool before serving them. Store in a dry air-tight container.
- If you want to prepare a lesser number of muruku’s, then reduce the above mentioned quantity and grind the flour in your home mixer.
