According to the study conducted at Purdue University, it is said that those who consume egg along with vegetables in the form of salads containing shredded carrots, tomatoes, romaine lettuce, Chinese wolfberry, etc absorbed higher levels of carotenoids by 3 to 9 folds.
Salad contains beta-carotene, alpha-carotene, lycopene, zeaxanthin, lutein out of which the latter two are obtained through eggs.
