2. Sabudana Sushi Rolls

A playful twist on sabudana, rolled with potato, peanuts and coconut, then sliced into bite-sized portions.

Ingredients:

- 1 cup sabudana, soaked and drained

- 2 medium potatoes, boiled and mashed

- ¼ cup roasted peanuts, coarsely crushed

- 2 tbsp freshly grated coconut

- 1 green chilli, finely chopped

- 1 tbsp chopped coriander

- Rock salt (sendha namak), to taste

- Ghee, for cooking

Instructions:

1. Mix the drained sabudana with mashed potato, crushed peanuts, coconut, grereen chilli, coriander and rock salt.

2. Spread the mixture in a thin rectangle on baking parchment and shape it into a compact roll.

3. Place the roll in a covered container and refrigerate in the Voltas Beko Refrigerator. NeoFrost™ Dual Cooling Technology helps maintain consistent cooling while the roll firms up for easier slicing.

4. Once chilled and firm, cut into bite-sized rounds using a sharp knife.

5. Lightly brush ghee and pan-sear the rounds until crisp, if desired. Serve fresh.

3. Kuttu Apple Rabri

Slow-cooked milk and kuttu crumble layered with caramelised apples, cardamom and nuts.

Ingredients:

- 2 cups full-fat milk

- 2 tbsp kuttu (buckwheat) flour

- 1 apple, peeled and diced

- 2–3 tbsp sugar

- ¼ tsp cardamom powder

- 1 tbsp chopped almonds or pistachios

- 1 tsp ghee

Instructions:

1. Heat the milk in a microwave-safe bowl in the Voltas Beko Microwave using short intervals, stirring between each interval to prevent it from boiling over.

2. In a separate microwave-safe bowl, toss the diced apple with ghee and a little sugar. Microwave for short intervals until softened, stirring in between.

3. Gradually whisk the kuttu flour into a little warm milk to make a smooth slurry, then stir it into the remaining milk.

4. Microwave the mixture in the Voltas Beko Microwave using short intervals and stirring frequently, until it thickens. The microwave’s multi-stage cooking function can help you set different cooking intervals for controlled heating. Add sugar and cardamom, then allow it to cool slightly.

5. Layer with softened apples, garnish with nuts, and refrigerate in the Voltas Beko Refrigeratorbefore serving chilled.

With these vrat-friendly recipes, breaking the Karwa Chauth fast becomes a little more special. From crisp kebabs and playful sabudana rolls to comforting apple rabri, each dish brings festive flavour to the table, with Voltas Beko appliances helping make preparation easier.
