Ingredients

- 1 tablespoon ghee

- ½ cup flattened rice (aval/poha)

- ⅓ cup grated coconut

- ⅓ cup powdered jaggery or sugar

- ¼ teaspoon cardamom powder

- 1 tablespoon milk

- A pinch of saffron

- 1 tablespoon milk powder

- A few crushed almond flakes

- A little ghee for greasing

How to Make Aval Laddu

Step 1: Roast the Aval

Heat 1 tablespoon of ghee in a pan. Add the flattened rice and sauté for about 30 seconds.

Add the grated coconut and continue roasting until the aval becomes slightly golden and aromatic.

Switch off the stove and allow the mixture to cool slightly.

Step 2: Add the Sweet Ingredients

Add powdered jaggery or sugar, cardamom powder and a pinch of saffron to the roasted mixture. Mix everything well.

Next, add the milk and milk powder and combine thoroughly.

Step 3: Coarsely Grind the Mixture

Once the mixture has cooled, transfer it to a mixer jar and grind it coarsely. Avoid making a fine powder or paste, as a slightly coarse texture gives the laddus a better consistency.

Transfer the mixture to a bowl and add the crushed almond flakes.

Step 4: Shape the Laddus

Grease your palms with a little ghee. Take small portions of the mixture and gently roll them into round laddus.

Tips for Making Perfect Aval Laddu

- Thick aval works well for this recipe, but thin or red aval can also be used.

- Roasting the aval in ghee enhances its flavour and aroma.

- Coconut is optional, but it adds a rich taste to the laddus.

- If you skip the coconut, adjust the quantity of jaggery or sugar accordingly.

- Aval and coconut can be roasted separately, although roasting them together saves time.

- You can use jaggery, brown sugar, white sugar or another sweetener of your choice.

- Cardamom, saffron, milk powder and coconut add extra flavour. Rose essence or other flavourings can also be used.

- Do not grind the mixture into a fine paste. A coarse texture works best.

- Since this recipe contains milk and coconut, the laddus are best consumed within 2 to 3 days.
