Healthy Food Recipes - Vegetable Gravy (Veg Masiyal)

Ingredients:
  1. Carrot – 2 nos
  2. Beetroot – 1 no (small)
  3. Radish – 1 no
  4. Beans – 10 pieces
  5. Broad beans (Avaraikai) – 5 nos
  6. Potato -1 no
  7. Onion – 1 no
  8. Tomato – 2 nos
  9. Turmeric Powder – ¼ tsp
  10. Sambar Powder (Chilli + coriander powder) – 1 tbsp.
  11. Salt – to taste
  12. Fennel seeds – ½ tsp
  13. Curry leaves – a few
  14. Coriander leaves – a few
  15. Oil – 2 tbsp.
  16. Kasuri Methi – 1 tsp
To Roast & Grind:
  1. Onion – 1 nos
  2. Ginger – a small piece
  3. Garlic – 5 cloves
Method to Prepare:
  1. Wash all the vegetables and chop it in to small pieces and keep ready.
  2. Heat the pressure cooker and add 1 spoon of oil. Then add all the chopped vegetables into it and sauté well for about 2 minutes.



  3. Now add required quantity of water, salt, turmeric powder and sambar powder and cook it for about 3 whistles. 



  4. Heat a pan with a spoon of oil and add chopped onion, ginger and garlic and sauté well for about 2 minutes.



  5. Then switch off the flame and allow it to cool for some time and grind it in a mixer without adding water.



  6. Again heat the pan with a spoon of oil and add fennel seeds, chopped onion and sauté well. Now add the grinded paste into it. Sauté well for about 2 minutes.



  7. Now added the grinded tomatoes into it. Mix well.



  8. Allow it to cook well for about a minute and then add the cooked vegetables (smash it using ladle) and mix well.


  9. Now cook this in low flame for about 3 to 5 minutes.



  10. Then finally add kasuri methi and mix well. It’s time to switch off the flame.



  11. Hot and Tasty Vegetable Gravy is ready to serve with Chapati or Dosai!



Tips:
  • Vegetable gravy will be more colourful, as we add beetroot to it.
  • You can very well add the cooked green peas, at once you add the cooked vegetables.
  • Instead of grinding the onion, ginger and garlic, you can just saute it and then add the vegetables.
  • If you don’t want the masala taste, you can avoid adding fennel seeds, ginger and garlic. The main purpose of adding fennel seeds and ginger is because these are good for digestion. 
  • While trying this dish, you can add different vegetable at various times, as it will be more colourful and d should not be more boring to our family members.
  • Don’t waste the Cooked vegetable water, pour it into gravy along with smashed vegetables.
  • It is good to store the fried gram powder in air tight box. Just add half a spoon of this powder to any kind of gravy before switching off the flame.  This makes the dish tastier and gives a thicker consistency.
