Ingredients:
- Sprouted Horsegram – 1 cup
- Garlic – 3 cloves
- Red chilli – 2
- Tamarind Extract – 1 tbsp
- Mustard seeds – ¼ tsp
- Urad dal – 1 tsp
- Curry leaves – a few
- Asafoetida – a pinch
- Cooking oil – 1 tbsp
Method of Preparation:
- Soak Horsegram for about 5 to 6 hours in water.
- Then drain it completely. Keep it in a bowl and close the lid.
- Within half a day, you can observe the formation of the sprouts in the Horsegram.
- You can very well refrigerate this sprouted horsegram for about 2 days, and can you whenever needed.
- Pressure cook the sprouted horsegram along with water and salt for about 2 whistles.
- Drain the cooked horsegram and keep it aside.
- You can prepare tasty and healthier rasam using the horsegram cooked water.
- Heat a pan with oil, add mustard seeds and urad dal. Wait until it turns light brown, add red chilli, curry leaves, and asafoetida.
- Then add the cooked horsegram. Taste for salt, if at all needed add a little salt to it.
- Mix well and add the tamarind extract. Stir well for a minute.
- Then switch off the stove and transfer it to a serving bowl.
- Garnish with coriander leaves.
- Hot and Healthy Sprouted Horsegram Sundal is ready!
Tips:
- Instead of tamarind extract, you can very well add lemon juice.
- It is the apt healthy evening snack for kids.
