Ingredients:
- Potato – 6 nos (small)
- Onion – 2 nos
- Garlic – 6 cloves
- Curry Leaves – a few
- Turmeric Powder – ¼ tbsp
- Sambar Powder – 1 tsp
- Salt – as required
- Oil – 3 tbsp
- Mustard seeds – ¼ tbsp
Method of Preparation:
- Wash the potatoes thoroughly and peel off the skin.
- Cut it in round shape even sized pieces.
- Finely chop both onion and garlic and grind it in a mixer to a smooth paste without the addition of water.
- Heat the pan with 3 spoon of oil and add mustard seeds and curry leaves and wait till it gets splutter.
- Then add the garlic and onion paste into it.
- Once it got fried well, now add the sliced potato into it and stir well.
- Saute it well for about 2 minutes and then add salt, turmeric powder, sambar powder and stir well.
- Then add required minimum quantity of water.
- Close the lid and allow the potato to get boil well for about 3 to 5 minutes.
- Open the lid and stir well and switch of the flame.
- Transfer it in a serving bowl and sprinkle coriander leaves for garnishing.
Tips:
- Tasty and healthy side dish for rice, adored by people irrespective of the age from children to adults.
- As we already boil the potatoes in the oil, only little quantity if water is more than enough to add finally to boil the potato.
- Once you have sliced off the potatoes before the preparation of the dish, keep it in a bowl of water, else the colour of potato may turns dark.
