Healthy Food Recipes - Healthy Sprouted Moong Bean Kuzhambu

Ingredients:

1. Sprouted Moong bean(Green Gram) – 1 cup
2. Ginger – 1 inch piece
3. Small Onion – 100 gram
4. Tomato – 2 nos.
5. Garlic – 10 cloves
6. Tamarind – a small lemon size ball
7. Cooking Oil – 3 tbsp.
8. Sambar Powder (Chilli & Coriander Powder) – 1 tbsp.
9. Fennel seeds Powder – ½  tsp
10. Turmeric Powder – ¼ tsp
11. Mustard seeds – ¼ tsp
12. Cumming seeds powder – ¼ tsp
13. Fenugreek seeds – ¼ tsp
14. Asafoetida – a pinch
15. Salt – as needed 

Method to Prepare:
  1. In the previous day, soak green gram for about half a day, and then drain it completely and keep it for about half a day. You can observe the formation of sprouted green gram.



  2. Add the sprouted green gram in the mixer. Add a small quantity of ginger and salt to it. Then grind it well along with the small quantity of water to it.



  3. Now the batter is ready. Take the idli pan and pour the batter in each cup and allow it to boil for about 10 minutes. Now the cut the idlies into small pieces and keep aside.


  4. Finely chop onion and tomato and keep it ready.
  5. Now heat the pan with a spoon of oil and add mustard seeds, cumin seeds, fenugreek seeds and wait until it splitters.
  6. Now add the chopped onion, garlic and curry leaves and stir well.



  7. Once onion colour changes to golden brown, add the chopped tomato and mix well.
  8. Then add the sambar powder, turmeric powder, Fennel seeds powder and salt as needed and stir well.
  9. Now add the tamarind water and stir well using the ladle.


  10. Allow it to boil for about 3 to 5 minutes, now add the chopped sprouted green gram idli pieces into it.



  11. Now allow the dish for boil for some more minutes and switch off the stove.



  12. Hot and Healthy Sprouted Green Gram Kuzhambu is ready to serve along with Rice!!!
