Healthy Food Recipes - Plantain Stem Curry (Vazhaithandu Kootu)

Ingredients:
  1. Plantain stem (Vazhaithandu) of Medium Size 1 no
  2. Toor Dhal cup or 50 grams
  3. Onion 1 no
  4. Tomato 1 no
  5. Garlic 5 cloves
  6. Turmeric Powder tsp
  7. Sambar Powder tbsp.  (Chilli & Coriander Powder Mix)
  8. Salt As required
  9. Curry Leaves a few
  10. Oil- 2 tbsp.
  11. Mustard seeds tsp
  12. Cumin seeds tsp
  13. Asafoetida a pinch
  14. Red Chilli 2 nos.
Method to Prepare:
  1. Gently remove the outer covering of the plantain stem and cut it into thin rounds detaching the thread kind of fibres using your index finger.


  2. Then finely chop the stem into small thin pieces. Put it in the diluted buttermilk so as to avert it from discolouration, else it will turn to brown colour.
  3. Soak Toor dhal in water for about half an hour.
  4. Finely chop onion and tomato into small pieces and keep it aside.
  5. Now heat the pan with 1 spoon of oil and add garlic, onion, curry leaves and saut well for some time. Then add the chopped tomato and fry until the raw smell leaves.  Now add the soaked Toor dhal to it.



  6. Then drain the buttermilk completely and add the chopped plantain stem to it and mix well.



  7. Now add the turmeric powder, sambar powder and salt.



  8. Mix well and add required quantity of water and pressure cook the mix for about 2 whistles.

  9. Then switch off the flame.  Wait until the pressure leaves and open the cooker lid.
  10. Gently smash the cooked contents using a ladle.
  11. Heat a pan with 1 spoon of oil and add mustard seeds, cumin seeds, splinted red chilli and asafoetida. Once the seeds splutters, drop it on top of the dish and mix well.



  12. Transfer it to a bowl and sprinkle splinted coriander leaves for garnishing.


  13. Serve hot Plantain stem Kootu with rice or chapatti!
Tips!
  • Instead of Toor dhal, we can also use Moong dhal or Chana dal to prepare plantain Kootu.
  • If you have time to soak Toor dhal half an hour before the preparation of the dish, you can very well cook it along with the pieces of plantain stem, else pressure cook the Toor dhal separately in a pressure cooker and add it to the dish.
  • Always choose soft and tender stem, since it is very easy for you to cut and eat and also it will have less thread.
