Healthy Food Recipes - Mushroom Biryani!

Ingredients:
  1. Button Mushroom – 10 pieces
  2. Raw rice / Basmati Rice – 400 grams (2 cups)
  3. Onion – 2 nos
  4. Tomato – 2 nos
  5. Mint leaves – a handful
  6. Cinnamon – a small peace
  7. Cloves – 3 nos
  8. Fennel seeds – 1 tsp
  9. Bay leaf (Brinji leaf) – 1
  10. Cooking oil – 5 tbsp.
  11. Salt – to taste
  12. Garam Masala – ½ tsp
  13. Red Chilli Powder- 1 tsp
Ingredients to Grind:
  1. Cinnamon – a small piece
  2. Cloves – 2 nos
  3. Fennel seeds – ½ tsp
  4. Onion – ½ piece
  5. Tomato – ½ piece
  6. Ginger – a small piece
  7. Garlic – 10 cloves
  8. Elachi – 1 (optional)
Method to Prepare:
  1. Wash rice thoroughly and soak it in water for about 20 minutes before the preparation.



  2. Wash mushroom in water. Heat water in a pan with a pinch of salt in it. Add the washed mushroom in it for about 3 minutes and drain it completely.


  3. Chop mushroom into small pieces and keep aside.
  4. Grind the ingredients given under the ‘to grind’ section and keep it ready.

  5. Heat a pan with a spoon of oil and add cinnamon, cloves, fennel seeds and bay leaves. Once it splutters add the chopped onion and sauté well.



  6. Once onion turns caramel brown, add the grinded paste to it and sauté well.



  7. Now add the cleaned and chopped mint leaves and sauté well.
  8. Now add the chopped tomato to it and mix well.


  9. After a minute, add the chopped mushroom to it and mix the ingredients well.



  10. Now add Garam masala powder, Red chilli powder and Salt to taste and stir well.
  11. Once the ingredients gets mixed well, transfer it to the pressure cooker and add the completely drained rice to it.



  12. Mix the contents well and add required quantity of water and close the lid. (For 2 cup of rice add 4 cup of water).



  13. Cook it for about 1 whistle and allow it to boil well for about 5 minutes in a low flame. Then switch off the stove.
  14. Once the pressure gets released, open the lid and transfer it to a serving bowl.



  15. Garnish it with chopped coriander leaves.



  16. Serve hot Mushroom Biryani with onion curd salad!
Tips:
  • You can very well reduce the quantity of the chilli powder and add more green chilli to the biryani.
  • While using Raw rice or Basmati rice for r the preparation of biryani, it is always good to sauté the ingredients well in a pan before transfer it to the pressure cooker. This is mainly because the ginger garlic paste may get stick on to the bottom of the cooker itself.
