Healthy Food Recipes - Kambu Sweet Pidi Kozhukattai (Bajra / Pearl Millet Modak)

Ingredients:
  1. Pearl Millet Flour / Bajra (Kambu Flour) – 1 cup
  2. Coconut Grated – ½ cup
  3. Sugar Powdered – ½ cup
  4. Salt – a pinch
  5. Ghee – 1 tsp
  6. Elachi Powder – a pinch
  7. Raw Rice flour – 1 tbsp. (optional)
Method to Prepare:
  1. Dry roast Kambu/Bajra flour in a pan. Be sure not to burn the millets. Remove it from the heat once nice aroma comes out from it and the grains turn crispy. Allow to cool completely.



  2. Transfer the mixture to a mixing bowl. You can add a spoon of dry roast raw rice flour for better consistency. But it is completely optional. Add a spoon of ghee, a pinch of salt and mix it well by sprinkling water little by little.



  3. We need not form a dough. Just make sure the mixture is wet enough to make balls. The balls should hold the shape and should also break while touching.



  4. If there are any lumps in the mix, try to break it either using hand or sieve.



  5. Steam cook the we flour mix in Idli pan (using cotton cloth) for about 5 minutes.



  6. Then open the lid, transfer it to a mixing bowl and add powdered sugar, grated coconut and Elachi powder and mix well.



  7. Make crumbles (Pidi Kozhukattai) out of the mixture. Either you can directly eat it or again steam cook the Kozhukattai for about 2 minutes.



  8. The main purpose of steam cook again is that, the coconut and sugar will get blend well to the Kambu flour and you can keep it for the whole day time and use it.




  9. Healthy Kambu Pidi Kozhukattai is ready for either evening snack or school box snacks - for all groups of people from children to old age.



Tips:
  1. It is always good to grind the sugar to a powder before using it and adjust the measure depends on your taste.
  2. As we are steam cooking the flour before itself, the Kozhukattai will be even softer, tastier and healthier too.
  3. You can also get the sprouted Kambu flour in the super market. You can also use it, as the sprouted form is much healthier.
  4. While preparing the puttu flour using either raw rice, Ragi and Kambu, in the procedure of sprinkling water on the flour, there may be some lumps there. It is advisable to sieve the wet  flour using the sieve, so that the flour completely free of lumps, else while steam cook thehe flour the lumps remains uncooked.
  5. Though the photos and process steps seems to be too lengthy; but absolutely its preparation time just 10 to 15 minutes only.
