Healthy Food Recipes - Kambu, Carrot and Murungai Keerai Adai (Bajra / Pearl Millet Dosai)

Ingredients:
  1. Kambu/Bajra (Pearl Millet) – 1 cup
  2. Moong Dal (Pasi Parruppu) – ¼ cup
  3. Boiled Rice (Idli Rice) – ½ cup
  4. Raw Rice – ½ cup
  5. Ginger – a small piece
  6. Red chilli – 3 nos
  7. Cumin seeds (Jeeragam) – ½ tsp
  8. Fennel seeds – ½ tsp
  9. Turmeric Power – ¼ tsp
  10. Onion (Chopped)– ½ cup
  11. Carrot (Grated)- ½ cup
  12. Murungai Keerai (Drumstick leaves)– 1 cup
  13. Salt – to taste
  14. Coriander leaves & Curry leaves – a few (optional)
  15. Cooking oil – 3 tbsp.
Method to Prepare:
  1. Wash and Soak Kambu, moong dal, boiled rice and raw rice in water for about 2 hours.



  2. Then drain it completely and add it to the mixer to grind.



  3. Add ginger, red chilli, fennel seeds, cumin seeds, salt, and turmeric powder and grind it coarsely. (Similar to the dosa batter).


  4. While grinding the above, add small quantity of required water.



  5. If you want to prepare then the batter should be in thicker consistency or if you are going to make dosai crispy, then alter the water quantity, so that to liquefy the batter similar to dosai batter consistency.



  6. In the meanwhile, heat a pan with a spoon of oil and add chopped onion, grated carrot, cleaned drumstick leaves and roast it for a minute.



  7. Then add it to the batter and mix well.



  8. You can easily prepare either Kambu, Carrot and Murungai Keerai Adai or Dosai and serve hot with white or Red chutney!





Tips:
  • Once the batter is ready for making dosai, use it within half an hour time, else the batter will become very sour.
  • If you didn’t get drumstick leaves, you can also use both coriander and curry leaves as well.
  • As we are adding healthy stuffs like Kambu, carrot, drumstick leaves and moong dal, this Kambu Adai /Dosai is a healthy and colourful food item for children.
