Healthy Food Recipes - Snake gourd Usili (Pudalangai Paruppu Usili)

Ingredients:
  • Snake Gourd (Pudalangai) – 1 no
  • Urad dal – 1 tsp
  • Turmeric Powder – ¼ tsp
  • Mustard seeds – ¼ tsp
  • Cooking Oil – 3 tsp
  • Asafoetida – A pinch
  • Curry Leaves – a few
  • Salt – as required
Soak & Grind:
  • Toor Dal – 5 tsp
  • Red Chilli – 3 nos
  • Garlic – 5 cloves
  • Fennel Seeds (Sombu) – ½ tsp
Method for Preparation:
  1. Wash and soak Toor dal in water for an hour.



  2. Then drain toor dal completely and add it to the mixer.
  3. Then along with the toor dal, add red chilli, garlic, fennel seeds (Sombu), and salt to taste and grind coarsely without adding water.



  4. Wash snake gourd thoroughly and chop it into small even sized pieces.
  5. Boil snake gourd by adding required quantity of salt, water, turmeric powder.
  6. Allow it to boil well for about 5 minutes and close the lid.



  7. Heat the pan with 3 spoons of oil in it.



  8. Now add mustard seeds and allow it to splutter.
  9. Then add Urad dal and wait until it turns golden brown and then add curry leaves, asafoetida and the thick consistent paste that we already prepared and stir well.
  10. Once you add the dal paste, stir and press well using the ladle so as to avoid the formation of cramps in the dal.



  11. Allow it boil for some time, so the dal becomes dry. Once you get the feel like the dal gets boiled well, add the boiled snake gourd pieces (completely drained) and stir well.



  12. As we already added salt while boiling the snake gourd and the dal, add salt if at all you need.
  13. Mix the snake gourd and the dal paste well.



  14. Serve Hot ‘Snake gourd Usili’ with Rice!



Tips:
  • The main purpose of adding fennel seeds is that it aids in digestion. (If you want, you can avoid adding fennel seeds while preparing Usili).
  • In place of toor dal, you can use channa dal (or) you can mix both the dal (toor dal and Channa dal) to prepare Usili.
