Healthy Food Recipes - Palak Keerai Sambar

Ingredients:
  • Palak Keerai/ Spinach – 1 bunch
  • Toor dal - 100 gram 
  • Onion – 2 nos
  • Tomato – 3 nos
  • Tamarind - 1 gooseberry sized
  • Turmeric - 1/4 tsp 
  • Sāmbhar powder - 1 and 1/2 tsp 
  • Garlic – small lemon sized  
  • Salt - As needed 
TEMPER:
  • Oil -1 1/2 tsp
  • Fenugreek seeds -1/4 tsp
  • Asafetida -1/4 tsp
  • Mustard - 1 tsp
  • Jeera - 1/2 tsp
Method:
  1. Pressure cook toor dal well and keep aside.  
  2. Clean the Palak Keerai 2-3 times by washing it well by adding a small pinch of salt in water and chop it into small pieces and not too fine.

  4. Heat a kadai with oil and add the chopped onions, tomato and garlic. Fry till onions turn golden brown.
  5. Now add the chopped palak keerai into the kadai and let it fry for about 3 to 5 minutes.

  7. Then add the required water and add turmeric powder and sambar powder to it and bring to boil.
  8. Boil till keerai gets cooked. Finally add the boiled toor dal and allow it to boil for about 2 minutes.
  9. Now it’s time add the extracted tamarind juice and allow it to boil for about 4 to 5 minutes.

  11. In a separate pan add oil and add all the items for tempering and add it to the sambar. Instead if you have vadagam in your kitchen, then temper the sambar using vadagam; it will add more flavour to your recipe.

  13. Now sambar is ready. Serve it hot for rice!



Note:
  • While washing the palak keerai, it is recommended to add a pinch of salt to the water. This is because salt has the knack to slay the germs in the keerai.
  • This palak keerai sambar will go well with either rice or for idli or dosai.
  • Once we add the boiled toor dal to the boiling palak keerai, do smash the ingredients well using either big spoon or matthu so as to get a thicker consistency of the sambar.
  • Palak keerai is very beneficial for health, hence you can prepare many wide variety of recipes in it and include it in your daily diet.
  • Instead of preparing sambar, in the above recipe you can plainly add either red chilli or green chilli and pour small quantity of water.
  • Palak keerai is generally termed as the queen of vegetables, as it has more health and nutritional values. 
  • This spinach has the capability to dissolve the unwanted fresh fat in our body.
  • Anaemia patients, on continuous intake of palak keerai for 10 d days, can observe major difference in their blood level.
  • As palak keerai has health benefits equivalent to fish, meat and egg, append this in your diet as often as you can and grab its health beneficiaries.
  • As palak keerai hold small quantity of oxalates, it is not advised for people who are suffering from liver disease and some types of liver related diseases.
